Xanthan gum aqueous solution has good viscosity and is quite stable in the range of -4~80 ℃, when the concentration of ethanol, isopropanol or acetone in water is more than 50% ~ 60%, it will cause the precipitation of xanthan gum. Acid and alkali resistance and resistance to biological enzyme degradation ability is very strong, in the range of pH 1.5~13, the viscosity of xanthan gum aqueous solution is not affected by pH value. Xanthan gum is a natural high molecular compound, rats oral LD50>10g/kg,ADI does not require special provisions (FAO/WHO,1994). |
